Potato Beet Salad

The days are hot, school is out, the grill is fired up, and it's potato salad season. We're adding some color to ours today with a Haitian variation of Potato Beet Salad. Potatoes and beets are a lovely earthy combination with some parsley, and pickled red onions, this is great mellow tasting accompaniment to your early summer grilling. Haitian Pikliz

It is a big week for us. Friday marked our first official day as country representatives, and tomorrow we are moving into our new house. The thought of unpacking after 6 months makes me giddy! This week's transition seems more final than the previous ones, it feels like we have finally arrived at our destination, Haiti is home. As we have explored Haitian culture through food, pikliz was our first culinary attempt. Pikliz is a beloved Haitian condiment; a pickled cabbage dish with spices and citrus notes, that often accompanies rich or fried foods. Our usual make-taste-adjust routine was somewhat stymied, when after our 9th batch, we just couldn't seem to get a consensus from our Haitian friends and co-workers, of the flavor profile for the perfect pikliz. More heat, more sweet, less sour, more citrus, less salt, more salt, add color, more crunch. Finally we figured it out, there is no perfect master recipe. This is our favorite version of our many, many batches. Enjoy tinkering with the recipe to make pikliz your own. This tangy condiment is fantastic with all manner of meathot dogsburgers, and stewed dishes.

Ginger Sesame Green Beans

We celebrated Labor Day in Connecticut with Paul's brother and sister-in-law with lots of amazing vegetarian food. We left salty breezes behind and arrived back to the hot, humid jungly hills of Pittsburgh last night to a barren fridge yielding a dinner of either hotdogs or green beans. We opted to continue the vegetarian theme of the weekend, and whipped up a batch of these Ginger Sesame Green Beans we have been loving all summer. Spicy, tangy and gingery, these green beans are addictive! Check out our summer bounty round-up for other ideas for summer vegetables.

Grilled Potato Salad with Jalapeno, Bacon, & Blue Cheese

Grilled Potato Salad with Jalapeno, Bacon, and Blue Cheese is inspired by my father-in-law’s love of bacon, blue cheese, and caramelized onions. This 'salad' is decadent and packed with rich flavors. The grilled new potatoes are tossed in a garlic jalapeno vinaigrette and layered with smoky slices of thick-cut grilled bacon, sweet charred red onions, and pungent blue cheese. Move over mayo, there's a new potato salad in town!

Cream of Asparagus Soup

Paul is in the homestretch of his masters program, and is once again home in the evenings. He has been cooking, smoking and grilling up mountains of food in celebration. I sometimes have trouble focusing on the meal he’s made, because it’s such a novelty to have our evenings together again. To warm us up on this cold spring week, Paul made a extraordinary Cream of Asparagus Soup and fresh sourdough bread. The secret, I discovered, was in the short cook time on the asparagus, and the addition of peas for color and sweetness at the end of cooking. Paul finished the soup with savory flavor boosts of parmesan and vinegar to add depth to this quick spring soup.

Pork Vindaloo

A few years ago we traveled to India. India is the place where Paul’s brother and sister-in-law met, and where Paul’s brother lived and worked for a number of years. It is a vibrant country with a huge diversity of cuisine. We learned early on in our travels, how hard it is to recreate dishes in our home kitchen without some hands-on experience of the regional cooking techniques and ingredients. Having struggled to master Indian cooking at home, we signed up for a cooking class in each region we visited, and Goan Vindaloo was at the top of our list. 

Pork Vindaloo is a spicy, garlic and vinegar seasoned pork dish that comes from the South Indian state of Goa, known for its unique blend of Portuguese and Indian cuisine. Vindaloo’ s name comes from the Portuguese words ‘vinho,’ wine (vinegar) and ‘alhos,’ garlic. Introduced to Goa by Portuguese colonists, Vindaloo evolved with the addition of Indian spices and seasonings. Vindaloo is a uniquely pungent stew with a strong punch of garlic, vinegar and mustard, mellowed by rich coconut milk. Madhur Jaffey, an award winning Indian cooking authority, is a wonderful resource if you are looking to make Indian food at home, and our recipe for Pork Vindaloo follows in her style of simplified Indian cooking.

Blood Orange & Ginger Shrub

Blood Orange & Ginger Shrub- we are talking about an odd sounding, old fashioned beverage that has nothing to do with gardening or hedges.  The shrub was a popular drink in America during the colonial times, and referred to a vinegared fruit syrup mixed with water, alcohol or sparkling water, also called a drinking vinegar.  The British have their own version of a shrub, a fruity alcoholic cordial, without the vinegar.  Recently, shrubs have had a revival in bars and restaurants, and for good reason, they are refreshing, tangy and delicious!  Shrubs are easy to make, and have only three ingredients, fruit juice, sugar and vinegar.  They can be made in two ways, hot or cold, and in our recipe for Blood Orange & Ginger Shrub, we opted for a slightly modified cold version.

Grilled Chicken Bánh Mì Sandwich

Rebecca's all-time favorite sandwich is the Vietnamese Bánh Mì. Our take on this Vietnamese-French fusion classic uses unctuous grilled chicken, tangy pickled vegetables, heaps of cilantro and jalapeno, and a robust mayo sauce. Despite the long ingredient list and exotic heritage, Grilled Chicken Bánh Mì Sandwiches are straightforward to make and can win over even the pickiest of eaters.

Grilled Spelt Flatbread with Tapenade & Tomato

Check out our Grilled Spelt Flatbread with Tapenade & Tomato featured in Pittsburgh Magazine this week! We just love Brazen Kitchen's Leah Lizarondo and her irreverent take on seasonal vegetarian cooking. 

This tender and chewy flatbread uses local spelt to up the nutty whole grain flavor. We are addicted to this no-knead spelt flatbread, and find it has a taste and texture reminiscent of Indian naan and whole wheat pita. On a warm summers evening, we like to throw this easy flatbread on the grill, spread generously with briny tapenade, and top with juicy ripe tomatoes. This spunky tapenade, packed with garlic, tarragon, and green olives, pairs beautifully with the sweetness of August tomatoes. For us, this dish epitomizes summer: fresh produce, bright flavors, and smoky char.
