Maple Black Pepper Oven Spareribs

It's 80 degrees in northern Indiana today. The sky is blue, the trees are budding, and our daughter is happily smeared from head to toe in the mud she's dug out of the backyard. To kick off spring, I whipped up these Maple Black Pepper Oven Spareribs. These spareribs are easy to make, don't require a smoker or any complicated equipment, and are absolutely delicious! These ribs forgo the traditional tomato-based sauce, and bring to center stage the fresh maple syrup Rebecca was given a few weeks ago from a local Amish farmer. Spicy Maple Hazelnut Brittle

Paul and I approach desserts very differently. Paul is the give-me-a-challenge-dessert-maker. His enjoyment of the dessert making process appears to be directly correlated with the hours of prep and level of complication. Full disclosure, this is a great food type to be married to, all I have to do is casually mention a complicated dessert, note that it sounds amazing and nonchalantly question both Paul's ability and willingness to reproduce it. Then I settle in for a long wait, a complicated confectionery process (often involving candy thermometers and scales), and a stunning end result.

Spicy Maple Hazelnut Brittle was inspired by the a jar of maple syrup and bag of hazelnuts I found during our house packing and was loath to discard. While the recipe involves some tricky chemistry and the use of a candy thermometer, the result is spectacular: a crunchy sweet and spicy maple brittle loaded with tons of perfectly toasted (almost smokey) hazelnuts. A perfect winter treat!

Salted Maple Buttercream

In the countdown before our departure, we have been cooking and eating our favorite things... with maple syrup topping the list! We are both mad for maple; we like it in baklava, with smoked salmon, in granolamixed into french toast, even baby back ribs, and we stockpile it compulsively. Last month we set out to make a fall/winter dessert that would showcase this extraordinary elixir at it's finest, and a dark almost bittersweet Blackstrap Molasses and Fresh Ginger Cake with Salted Maple Buttercream was the delicious result. This dessert was a team effort, while I whipped up a spicy molasses cake, Paul boiled down dark amber maple syrup, whipped eggs yolks and butter to a creamy consistency for a transcendent, incredible salted maple buttercream. Paul made Salted Maple Buttercream no less than 4 times in the past month, and while we try to avoid superlatives, I'm pretty sure this is the best flavor of buttercream I have ever tasted. Paul's comment, as he made batch after batch; "remember this one, I want a big bowl of salted maple buttercream for my last meal."

Whiskey Custard French Toast

Some mornings call for decadence. Whiskey Custard French Toast is ready in under 10 minutes, rich and custardy in the middle, golden brown and lightly crispy on the outside, delicately sweet, and spiked with the vanilla and peppery notes of a good whiskey. Being back in school this week has meant rushed chilly mornings without time for breakfast. With the weekend here, I was ready for an indulgent start to the day.

Maple Walnut Baklava

We love maple syrup! Possibly my own craving for this iconic sap is the result of my Canadian heritage. But then there’s my American husband, who obsessively drizzles maple syrup over everything in sight, from a sweetener in his tea and coffee, to pork roasts, chili, ice cream, to salmon. Regardless of the origins of our maple passion, the maple-fication of Baklava was really quite inevitable. Maple syrup accompanies us camping and hiking, vacationing and traveling. Little bottles of maple syrup were stowed away in my suitcase headed to Ethiopia by my mother, and were in our packs as we traveled by moto in Vietnam and hitchhiked in Thailand. Maple Walnut baklava is a fantastic dessert, managing to be both light and flaky and also rich and gooey. This dessert features sheets of delicate filo, layered with the toasted flavors of browned butter, roasted walnuts, cinnamon, oranges and clove. Once cooked, the flaky pastry is bathed in a concentrated maple syrup, with a deep caramel flavor and subtle sweet notes.

Spicy Maple Glazed Baby Back Ribs

When having someone over, we often find ourselves perseverating on the perfect dish. Our brother-in-law-to-be has a birthday coming up, and we've been obsessing on rib recipes in preparation. After many delicious test batches (it's a hard life), Paul emerged this week from his smoker, charred ribs in hand, triumphant! We devoured these Spicy Maple Glazed Baby Back Ribs with long satisfied silences interspersed with occasional groans of delight. Maple Juniper Smoked Salmon

Fish cookery and smoked foods don't have to be labor intensive and intimidating. Our recipe for Maple Juniper Smoked Salmon uses a simple Native American technique to easily bring lightly smoked, delicately cooked, flavorful salmon to your table (and impress your wife with your pioneering skills)! For those of you with maples growing in your backyards, its time to break out the clippers! The fish is grilled on a bed of freshly cut maple twigs and leaves, which allows the fish to gently cook while wrapping it in aromatic smoke. The glaze uses juniper and maple syrup to produce a subtle sweet and piney flavor. When buying fish, we try to make sure it is sustainably harvested (or farmed). Ask at your local seafood store, they are usually very knowledgeable. This recipe is based on one of my favorite cookbooks: Food of the Americas: Native Recipes and Traditions by Fernando and Marlene Divina. Buckwheat Buttermilk Pancakes

Buckwheat Buttermilk Pancakes are a healthy, delicious, and easy weekend breakfast with warm malty flavors not usually found in your run of the mill pancakes. The whole buckwheat flour gives these pancakes a rich brown flecked color and hearty nuttiness which pairs beautifully with tangy buttermilk and caramelly maple syrup and molasses. The result is a perfect pancake texture, dark earthy flavor,  and enough nutritional goodness to make you feel good about slathering your Buckwheat Buttermilk Pancakes with butter and maple syrup. This recipe is adapted from King Arthur Four's wonderful Whole Grain Baking.

Dark Chocolate Pretzel Granola Bars

I have a family brimming with athletes; there are triathaloning uncles, cyclist aunts, a few who even go to iron man extremes, there are high jumping cousins, long distance winning boys and record setting girls.  This weekend is the Pittsburgh Marathon, where over 30, 000 people will race through our beautiful city, up hills, over bridges and across the three rivers.  Paul and I, along with our hounds, will be there to cheer on my sister as she continues the family tradition of athleticism and runs the half-marathon!  In the spirit of pre-race carb loading, (and middle of the race snacking for the loyal fans), we offer you these delicious dark chocolate-pretzel granola bars.  These granola bars are infinitely more delicious and healthy then their store-bought peers.  I like to make a big batch of granola bars and freeze them individually wrapped.  So while others race, jump, bike and swim, we will be happily cheering and snacking on these tasty bars!

When getting ready for guests, we often whip up a batch of our favorite granola. Its a crowd favorite, easy to make in large batches, and it smells great baking (while you rush around cleaning up the house)! As side benefits, it stores well in the freezer for several months, makes an excellent last minute host gift, and serves as a handy snack.
