Chewy Coconut Honey Granola

Madeline's grandparents from Indiana arrived for a visit this week. It was lovely support to have in the midst of our coordination and response to Hurricane Mathew. With grandparents here to watch Madeline in the early morning hours, we made a big batch of Chewy Coconut Honey Granola to feed the early risers. This Chewy Coconut Honey Granola is our favorite here in Haiti. It is dead simple to make, and a fantastic balance between sweet and salty with a satisfying chew.

Easy Coconut Baked Oatmeal

We have been in Honduras this past week for work meetings with our regional colleagues. One thing that makes our organization unique, is an emphasis on cultivating relationships and being a good host. In this spirit, our Honduras-based supervisors welcomed us into their home with delicious home cooked meals, among them a scrumptious breakfast of baked oatmeal with fresh strawberries. Not only did we stuff ourselves, but coincidentally, we had been experimenting with our own baked oatmeal recipe over the past month. Our version of Easy Coconut Baked Oatmeal is a hearty, crunchy, warm and filling breakfast. This simple to make breakfast dish will perfume your house with cinnamon and oats and is best hot out of the oven, doused in cold milk, a perfect meal to share with guests.

Curried Turkey Salad

With Thanksgiving past, our departure date is just 2 days away. This last month we've had a wonderful time visiting with family and friends and saying goodbye. Now, our belongings are safely tucked away in storage for the next 5 years, our house and cars are sold, and we have some pretty enormous duffel bags sitting packed at the foot of our bed. Last night we completed the last item on our Haiti-bound check-list, and stayed up late chatting excitedly about the new things to come; a baby, learning a new culture, cuisine, language and job, traveling, hosting friends and family. Life feels pretty vast right now!

Lest we digress too long from the ever important topic of food, and with a mind to Thanksgiving leftovers, we're sharing our favorite spunky and updated curried turkey salad today. This is a vibrant and flavorful recipe Paul has been perfecting for the past year, and a delicious lunch as you laze around after the holiday. Think of this recipe as a guide, and freestyle with whatever ingredients you happen to have on hand.

Tomato & Almond Pesto, Pesto Alla Trapanese

Tomato and Almond Pesto, pesto alla Trapanese, is from the Trapani province in Northwest Sicily. Almonds are native to Sicily, and so in this offbeat, rosy-hued pesto, almonds replace pine nuts and cherry tomatoes add color and tartness to the mix. We love this pesto for its mellow, complex and fruity flavor and have been making it for years, unfortunately, some ‘technical issues’ have gotten in the way of publishing it on the blog. 

There was the time I forgot to attach the lid to the food processor and the pesto ended up streaking the ceiling. In my next attempt, I managed to actually make the pesto, but then took a whole bunch of yummy looking pictures without a card in the camera. Determined to make and photograph it my third attempt, I got mid-way through the recipe before realizing that I didn’t have parmesan, so I substituted a mysterious fridge cheese and created a monster of a dish with a vomitus appearance and nasty bitter flavor. At this point I gave up until, in an attempt to escape afternoon house projects this weekend, I volunteered to make lunch, and commenced my final attempt to make and photograph tomato and almond pesto for our blog. I had forgotten how good and easy  it really is! Some take home reflections: secure lids on all kitchen devices; don’t bother photographing your food, just eat it; stick with parmesan cheese; and ditch plain-Jane basil pesto and make it’s funkier Sicilian cousin with almonds and tomatoes. Toasted Oat & Honey Porridge

I crave porridge for breakfast on cold winter days. Growing up, my sister and I ate porridge for breakfast most mornings. At some point along the way, things got a little creative, with my sisters’ addition of chocolate chips to her bowl, and my own garish sprinkle of mouth puckering vitamin C powder to mine. I think you could say that these add-ins remain a fairly accurate representation of our adult taste preferences. When I saw the title ‘very best oatmeal’ in Whole Grain Mornings, I couldn't resist. Our slightly adapted version, Toasted Oat & Honey Porridge, is fantastic and speedy, and I have been obsessively making it on weekdays and weekends for the past month. The texture is incredible, no more gummy, thick porridge. Instead, the technique preserves the shape and texture of the individual oats through a two-step toasting and steaming process that leaves you with a surprisingly soft and chewy texture. We liked that addition of honey for just a hint of sweetness, and a flurry of crunchy almonds and pomegranate seeds to make this into a quick, beautiful, and delicious bowl of porridge.

Apple Almond Tart

Some are born great, some achieve greatness, and some eat greatness in an apple tart. We count ourselves in the third category. Our Apple Almond Tart is a trifecta of dessert greatness.  A crisp and flaky butter pastry base, creamy almond cheese filling, and delicately cooked apples for tart contrast. We recommend that you go ahead and double this recipe the first time, as we we polished off an entire tart ourselves in record speed.

Raspberry Almond Crisp

For me, fall is the season for rustic fruit desserts.  Crisps, cobblers, grunts, crumbles, slumps, pandowdys and brown bettys; all homey variations on the classic fruit-sugar-butter combination.  Raspberries come into their prime in early fall, so this past weekend, my sister and I did some fall raspberry picking. After gorging ourselves on as many of the berries as we could eat raw, I was ready to bake. I wanted to make an unembellished dessert that would highlight the raspberries, while gently blanketing them in a snug bed of crisped almonds, butter and sugar.  Crisps have a lot going for them, they are reliable, take well to innovation and substitutions and can be easily whipped up with whatever ingredients you have on hand. This Raspberry Almond Crisp smells amazing, and makes a perfect early autumn treat.

Maple Granola

When getting ready for guests, we often whip up a batch of our favorite granola. Its a crowd favorite, easy to make in large batches, and it smells great baking (while you rush around cleaning up the house)! As side benefits, it stores well in the freezer for several months, makes an excellent last minute host gift, and serves as a handy snack.
