Quick Thai Curry Drumsticks

Rebecca and I are coming up on 8 years of marriage. Crazy, I know. This week's sweltering and humid weather here in Haiti had me thinking back to our engagement in Thailand. In particular, I was remembering one late evening walk through a night market in Bangkok, snacking on delicious street foods as we talked about what a life together would look like. One stand was serving grilled chicken in an addictive, slightly sweet peanut curry sauce. Maybe it was just the romance of the moment, but that flavor combo has stuck with us, and it's one we find ourselves coming back to in the heat of summer. These Quick Thai Curry Drumsticks are simple, quick, and perfect for a hot summer evening.

Turkey Feta Burgers with Yogurt Curry Sauce

On a holiday weekend famous for feasting and barbecues, we wanted to share one of our favorite burgers. These healthy Turkey Feta Burgers with Yogurt Curry Sauce are quick to make, light on fat, and big on flavor. If you are feeling adventurous, you can also substitute the turkey in this recipe for another lean meat like lamb, buffalo, or venison. To top these burgers, we ditch the usual lettuce, and opt instead for the crips fresh accompaniments of cucumber, tomato, and homemade pickled red onions

Carrot Coconut Soup

Carrot Coconut Soup is made in under 30 minutes and uses a genius recipe from James Peterson. We love Peterson's cookbooks so much that we originally named our rescue greyhound ‘James Peterson’ in his honor. To our chagrin, we quickly discovered two names and multiple syllables to be far too overwhelming for a greyhound with limited life skills. Now, he just answers to Leo. Carrot Coconut Soup builds flavor from a sauté of carrots in butter, with an unusual thickener of rice, finished with coconut milk and curry  to round out this delicious soup . Easy pantry ingredients, foolproof technique, and lovely bold flavors!
